Airsaab DC-36S/DC236S model of retarder proofer is designed and built to control the retarding and proofing process of bakery and pastry dough. It makes the process of retard proofing easy and consistent, keeping uniform temperatures throughout the trays and even, constant airflow. A retarder-proofer is a cabinet with a controlled and adjustable temperature and relative humidity. During the final stage of the cycle, it transforms from a cold storage room to a heated cabinet to encourage proving. Fermented goods can be retarded and stored overnight or through the weekend, automatically proving the product ready for baking at a pre-set time. It is equipped with a big see-through window allowing a perfect view of the product during the proofing process. The proofer has a digital control panel with timer, humidity and temperature setting. The control panel also has buttons for light and fan operation. Our retarder proofer improves productivity and quality in baking breads.
